Thanks again to all for your input.  Last night we hooked up all of her stuff and used the layout that widescreenforever suggested.  At first listen it sounds not too bad, although as raymangnu said, sitting in front of the rear speakers does sort of defeat the whole surround thing.  That said it it sufficient for her though.  I also told her that if she ever moves to make sure she has a normal-shaped living room.
