Just right-click on any title in your list and select "Watched by..." That will give you a window where you can check off any user defined in the program as having seen the movie. If you need to add users, there's an "Edit Users..." button in the bottom left corner of that window.
I suppose there's no "not seen" feature built in, but you could indeed use tags for that.
